Not a tutorial, but a good reference would be in the Plugin Handbook. You can see there the code is straight forward, but if you’d rather not code it, there are a number of plugins that help you manage roles and capabilities through a UI.

A summary of default Roles and Capabilities is in the Codex. You can see there that authors have limited capabilities, but can publish posts. Contributors can create and edit posts, but a higher role would need to publish for them, they cannot publish their own posts.

When a custom post type is created, such as “product” for example, it can inherit the default post capabilities that users are required to have, or a new set could be defined. No one can do anything with a new set unless their role gets the right capabilities assigned, not even admins. It’s possible to have a specific user manage products that even admins couldn’t touch. It doesn’t make sense, but it’s possible. Just about any permissions scheme you can imagine can be configured.

For a multisite installation, see Create A Network in the Codex. For more on what you can do with a multisite install, see Multisite Network Administration.
