Tables aren’t out of fashion, but tables have been misused for a really long time. A table is useful for displaying information that would lack context without table headings. Tables should not be used for visual reasons, i.e. if you wanted information in 2 columns. Using tables incorrectly will produce a bad experience for your users.

We cannot answer why commercial themes do not have tables included. Maybe it’s because they know users will misuse them, or maybe they know plugins do a much better job at tables than they ever will.

In the example you show of the Organizations.htm an ‘unordered list’ or ‘description list’ would be much better to use than a table. You can then use 3 lines of CSS to display them side by side.

In general if you’re looking for a way to display non-tabular content side by side, try researching ‘column’ or ‘grid’ plugins: https://wordpress.org/plugins/search/grid/
