WordPress fix Image size settings

    Background –I am new to wordpress and am a photographer with 100s if not 1000s of images to upload and so that my space is not filled with the extra default images sizes I had set those all to 0. I upload my images at 1200 optimised to about 100k so that they just about look acceptable on a desktop and they look great on smaller devices.
    My theme seems to also generate a 1024px image and I see that a hidden default wordpress also makes a 768px image. I am ok with the extra 768px image being generated to help responsiveness
    Question.
    Should I set wordpress to generate an extra medium size image/thumbnail so as to speed up mobile viewing and if so what size should I set it. Also my pages built so far are all with the defaults set to 0 if I change the medium setting to a certain size if I then use force regenerate thumbnails will that add the extra new size for all my already uploaded images.
    Am I damaging the mobile speed by not letting wordpress generate a medium image
